2021 Cabernet Sauvignon

VINTAGE 2021 IN MARGARET RIVER
The growing season commenced with a mild Spring with reasonable but not extreme rainfall, which was excellent for the vines. November was a significantly wet – double the long-term average with 14 days of rain. As harvest was commencing in early February the region saw significant rainfall which was beneficial for later – ripening red varietals.
The Cabernet Sauvignon fruit was picked on the 5th April, at 13.5 Be and the Malbec fruit on 25th March at 14 Be.
Vinification
The fruit was cold-soaked for four days then hand-plunged in small batch open top fermenters with a total of 18 days on skins to achieve a brightly-fruited wine with good flesh and tannin profile. Then pumped over 2-3 times per day for 18 days.
The wine was barrel aged for 15 months in 35% new French oak barriques.
Cabernet Sauvignon 96% and Malbec 4%
The wine was bottled in December 2023 and sealed under screwcap closure.

- Varietal aromas including bay leaf, black currant
- Sea shell minerality with a whiff of new leather
- Cedary oak, licorice and baking spices
- Palate is medium to full bodied with excellent structure
- A precise focus extending through to a long finish
